As a kid, I hated avocados. I just found them weird in color, unappealing in taste and just generally inedible. My mum would always disguise avocados as this dip claiming that it was Frankensteins’ brain. I don’t know why I found the brains of a green mutant more appealing than avocados but it worked. This dip is a great alternative to guacamole in case you’re kind of tired and bored of serving the same thing. I use toasted pita breads instead of chips for this dip but both work perfectly well.
Ingredients: 2 avocados, 2 eggs, 1/2 onion, 2 cloves garlic, salt and pepper to season
Begin by boiling the eggs. Cool and chop into cubes.
Next saute chopped onion in olive oil on medium heat
Scrape the avocados from the skin and the pit.
Add the eggs, onions, avocados, salt and pepper into a blender or food processor and puree into a dip.
Enjoy with pita bread or chips!
